Raw Food Class

The Nutrition Shoppes supports the idea that including a selection of raw foods in your diet as a measure of good health. This can sometimes be confusing, however. Does this just mean the standard “apple a day”?

Many foods that you may find in a can or a jar in the grocery store may seem to be raw, but have probably been pasteurized or processed in some way that affects the proteins, enzymes and other nutrients rendering them somewhat useless or even possibly toxic to the body.

Several times a year, we offer an evening class in order to better inform the community about what we truly mean when we say “raw.” Along with information & discussion, we also offered a demonstration and samples of raw foods we made here in the store with easy-to-find ingredients.

This is an example of a raw food dish presented at a class:

“MEAT”LOAF

1 1/3 cups walnuts soaked
1 1/3 cups sunflower seeds soaked
1 1/3 cups almonds soaked
1 TB minced garlic
1/2 tsp celtic sea salt
1/2 cup chopped fresh parsley
1/2 cup chopped celery
2 cups marinated portobello (chop it and soak in nama shoyu for 1 hour)
1 TB copped onion
1/2 TB minced ginger2 TB chopped fresh rosemary
2 TB chopped fresh rosemary
1 TB chopped fresh tarragon
1 cup chopped red bell pepper
1 TB minced jalapeno
1 1/2 tsp whole cumin seeds
1/2 cup olive oil

HOW TO MAKE: (don’t forget to soak nuts over night)
Blend nuts and seeds in food processor with garlic
Mix in rest of ingredients well with hands
Form mixture into a loaf and dehydrate for 1 hour at 90*F
Spread BBQ SAUCE over top and dehydrate for 2-3 more
hours, it could take longer (like 5 hours)
Serve warm and ENJOY!

BBQ SAUCE
1 cup chopped fresh tomatoes
1/4 cup chopped onion
1/2 cup chopped sun dried tomatoes
1/2 tsp minced garlic
3/4 tsp minced jalapeno
4-6 fresh basil leaves
1/2 pitted dates
olive oil for blending
1 tsp Celtic sea salt
1/8 cup maple syrup
1 TB olive oil
Make this after loaf starts dehydrating:
Put everything in the food processor and blend until smooth
Add olive oil if it is too thick
